MILLENIUM 2021

After a first vintage of 80 bottles that Lucas wanted to experiment with in 2020, the experience was renewed in 2021.

We leave the destemmed grapes in maceration like a pinot noir for 5 days, a partial fermentation has place in this tank. Then pressing, end of fermentation and aging in a micro vat. It is a so-called “orange” wine because the maceration will have produced an orange-pink color.

We are on a dry wine with notes of candied oranges and grains of coffee. It’s a gourmet wine with rabbit skewers, cheese, pork mignon en croute, all southern and spicy cuisine. Vintage 2021 confidential vintage 12.5° 75 cl.

The choice of the name Millénium is a tribute to Georgia, the millennial and original cradle of wines where already the wines were all made from grapes fermented in buried jars, qvevri, to, already, preserve them from the excesses of warming in this continental country.
